Er zijn twee versies voor fijnproevers: hartig en zoet. Van de gedroogde boon tot het heerlijke knapperige chocolade-nougatine bladerdeeg, tot de bonencrème die alle taartjes doet smelten in je mond. Een waar genot. De legende wordt hier verteld. Aan het einde van de 19e eeuw verliet de wachter van de kathedraal van Soissons, Le Paon genaamd, nooit de top van de toren. Hij hield de stad en de branden in de gaten terwijl hij als schoenmaker werkte. Om zijn stenen platform op te fleuren, begon hij bonen te planten, die hij in grote hoeveelheden produceerde, zodat hij toeristen kleine bonenzakjes kon aanbieden.
De tuin wordt momenteel gerestaureerd en zal in juni 2025 heropend worden.
