El Nougatine fue inventado hace más de un siglo por Jean-Louis Bourumeau.
Su creación fue un éxito gracias a la emperatriz Eugenia. Tras descubrir el dulce durante una visita oficial a Nevers con su marido, el emperador Napoleón III, le pareció tan delicioso que encargó grandes cantidades a su regreso e introdujo el Nougatine en todo París.
La pastelería-chocolatería Édée, guardiana del secreto del Sr. Bourumeau, mantiene aún hoy la tradición del auténtico Nougatine.
