Il ristorante Ekaitza si trova sulla banchina Ravel, a pochi passi dalla Casa Ravel (classificata come monumento storico), dove nacque il compositore francese. Affacciato sul porto turistico, l'ambiente emana una bella energia che pervade il luogo. La sala, con le sue tovaglie, è realizzata con materiali nobili e volutamente sobri, in modo da concentrare lo sguardo sul piatto e sul bicchiere di vino che vi viene offerto.
I prodotti di stagione sono rigorosamente selezionati, provenienti da produttori francesi e principalmente da circuiti brevi. Guillaume Roget difende una cucina di mercato che unisce creatività e rispetto del prodotto, con salse deliziose, condimenti equilibrati e cotture precise. Maxime Badeuil, pasticcere, e Maxime Develay, sommelier, sono tra i nove collaboratori dello chef che contribuiscono all'alta qualità di questa tavola.
