L'azienda, creata nel 1990 da un pescivendolo di Arcachon, ha scelto fin dall'inizio le energie rinnovabili, con la geotermia come risorsa principale, grazie al pozzo profondo esistente, che consente una crescita regolare durante tutto l'anno. Per ottenere il caviale dallo storione siberiano sono necessari dagli 8 ai 10 anni. In questo periodo i maschi vengono separati dalle femmine. In seguito, le femmine vengono tenute e i maschi sono destinati alla lavorazione della carne. Dopo 7 anni e regolari ecografie, un campionamento convalida la scelta delle femmine per la produzione di caviale. Tutti i pesci destinati al caviale vengono abbattuti prima. A questo punto inizia la raccolta, la setacciatura, il risciacquo e la salatura dei chicchi. Il caviale viene messo direttamente in barattoli.
