Dit etablissement, gelegen op de grens tussen Arbis en Escoussans, werd waarschijnlijk gebouwd in de tweede helft van de 15e eeuw. Het dankt zijn naam aan een Milanese wapensmid, Ambroise de Karoles, die zich in 1485 in Bordeaux vestigde. Aanvankelijk samen met drie andere Italianen, vestigde hij zich in 1490 in Escoussans, waarschijnlijk op verzoek van Gaston de Foix, graaf van Benauges. Deze molen, ook wel bekend als de moulin neuf (nieuwe molen), werd waarschijnlijk herbouwd na het einde van de Honderdjarige Oorlog en werd gebruikt om platen te slaan voor wapenonderdelen en om graan te malen.
