Catherine Manoël is een Meester Jammaker (het hoogste ambachtelijke diploma in Frankrijk) en lid van de Compagnons du Devoir Égalitaire en de ACMU. Le Comptoir des Confitures staat vermeld als Gourmet Business in de Gault & Millau-gids, evenals in de Petit Futé- en Gilles Pudlowski-gidsen. Catherine Manoël won ook de Canal 32 Nuit des Réussites-prijs voor ambachtslieden in 2024 en de prijs voor Beste Jam in de regio Grand Est tijdens de Foods and Drink Awards in 2025. Ze maakt jam met vers fruit, lokaal geteeld volgens biologische en duurzame landbouwmethoden. Ze gebruikt geen kleurstoffen, conserveermiddelen of agar-agar en kookt haar jam op traditionele wijze met appelpectine uit de Vallée d'Othe. Ze biedt een assortiment van 250 originele jams in prachtige glazen potten, evenals een klassieke selectie. De wildste, meest verrassende en opwindende smaken worden samengebracht door liefde voor gastronomie en de authenticiteit van de producten. Geopend van dinsdag tot en met zondag van 14.00 tot 18.00 uur, uitsluitend op telefonische reservering. Zaterdagochtend op de markt van Troyes.
