Questo mulino tutelato è sicuramente il più conosciuto della regione del Quercy, perché è aperto al pubblico da molto tempo, ma anche e soprattutto per la sua magnifica cornice paesaggistica e il suo bellissimo edificio fortificato. La sua storia, strettamente legata ai monaci cistercensi dell'abbazia di Alix, inizia nel XIII secolo. Ha non meno di quattro coppie di macine che producevano 3 tonnellate di farina al giorno. Il signor Faure accompagna i visitatori e li fa lavorare per loro. Sottolinea tutte le procedure introdotte dai monaci per impedire ai saccheggiatori di entrare e rubare la farina. I modelli facilitano la comprensione del funzionamento.
