Historien om dette bryggeri begynder med en kærlighedshistorie. Gregory Verhelst, en ung biokemistudent, lærte sin kone at kende i Louvain-la-Neuve. Med et diplom i bryggeri og malteri fulgte han hende til hendes hjemland i Gaume, hvor han i 2000 startede et bryggeri. Han købte gamle installationer og eksperimenterede med malt og humle. Rulles Brune, Blonde og Triple er tre kraftige øl uden tilsætning af krydderier og farvestoffer. Samtidig er sortimentet blevet udvidet, og der eksporteres til GH Luxembourg, Italien, Frankrig. Alle øl har en sjov etikette med en illustration af Marcel Le Rullot, en sympatisk Gaumois. Bryggeriet kan besøges efter anmodning. Du kan købe de håndværksmæssige øl i den lille butik.
