La storia di questo birrificio inizia con una storia d'amore. Gregory Verhelst, un giovane studente di biochimica, conobbe sua moglie a Louvain-la-Neuve. Con un diploma in produzione di birra e malto, la seguì nella sua terra natale nella Gaume, dove nel 2000 iniziò a creare un birrificio. Acquistò vecchi impianti e sperimentò con malto e luppolo. La Rulles Brune, Blonde e Triple sono tre birre robuste senza aggiunta di spezie e coloranti. Nel frattempo, la gamma si è ampliata e vengono esportate in GH Lussemburgo, Italia, Francia. Tutte le birre sono dotate di un’etichetta divertente con un'illustrazione di Marcel Le Rullot, un simpatico Gaumois. Il birrificio è visitabile su richiesta.
