Overijse hatte früher eine reiche Biertradition mit zahlreichen Brauereien. Nicht nur im Pajottenland, sondern auch hier wurden Lambikbiere und Geuze hergestellt! Von 1952 bis 1977 wurde in Overijse sogar das bekannte Leffe von der Brauerei Lootvoet gebraut. Von alledem ist nur wenig geblieben. Stärker noch: In Overijse (und Umgebung) kamen immer mehr Trauben-Serres hinzu, und Overijse profilierte sich allmählich als das Mekka der Tischtraube und das Zentrum der Traubengegend.
