Das Wort Bouillon tauchte 1855 auf und wurde von einem Metzger in Paris, Pierre Louis Duval, erfunden, der ein Gericht aus Fleisch und Bouillon für Arbeiter auf dem Les Halles-Markt zubereitete. Die Arbeiter liebten das einfache, schmackhafte Gericht. 1896 gründeten zwei Brüder, Frédéric und Camille Chartier, eine Brasserie mit dem Namen 'Le Bouillon' in einer Bahnhofshalle. Es begann ein Trend für die Restaurants mit dem Namen Bouillon. Bis 1900 gab es fast 250 Restaurants mit dem Namen Bouillon und obwohl die meisten verschwunden sind, gibt es noch einige in Paris, die auf jeden Fall einen Besuch wert sind. Dies ist eines davon.
