Diese Einrichtung an der Grenze zwischen Arbis und Escoussans wurde wahrscheinlich in der zweiten Hälfte des 15. Jahrhunderts errichtet. Seinen Namen erhielt es von dem Mailänder Waffenschmied Ambroise de Karoles, der sich 1485 in Bordeaux niedergelassen hatte. Er war zunächst mit drei anderen Italienern verbunden und ließ sich 1490 in Escoussans nieder, wahrscheinlich auf Wunsch von Gaston de Foix, Graf von Benauges. Diese Mühle, die auch als neue Mühle bezeichnet wird, wird wahrscheinlich nach dem Ende des Hundertjährigen Krieges wieder aufgebaut und dient nun zum Schlagen von Platten, die für die Herstellung von Waffenteilen bestimmt sind, aber auch zum Mahlen von Getreide.
