Nach seiner Ausbildung zum Koch in der Region Landes hatte Alexis das Glück, zum Team des Restaurants Moulin de Poustagnacq in Saint-Paul-Lès-Dax und anschließend des Restaurants des Voisins in Salies-de-Béarn zu gehören. Danach hatte er das Privileg, für drei Jahre in die Brigade von Chefkoch Etchebest aufgenommen zu werden, in denen er sich weiterentwickeln und verschiedene Positionen bekleiden konnte. Der Ruf der Region war zu stark, also kehrte er mit einem Abstecher an den Tisch Maison Ruffet von Stéphane Carrade in die Heimat zurück.
Mit gut gefülltem Gepäck richtet Alexis heute seine Tätigkeit als Privatkoch ein, um bei Ihnen zu Hause zu kochen!
