The brewer is André Paeleman, born in 1954 and raised in Wetteren. His childhood dream was to become a brewer.
Microbrewery Paeleman was started in 1996.
What initially was an industrial bakery was transformed into a microbrewery. Stainless steel milk tanks and equipment from other breweries (brewery Slagmulder and Jawadde from Ronse) were used.
750 liters of beer were brewed once a week. The first beer was Uitzet 1730, a tripel type with a distinctly bitter taste and aftertaste. A lot of Aalst hops are used. This beer was first brewed in 1730. It was a light amber beer of top fermentation, very unusual for that time. Previously, all beers were dark. But in 1790, cholera epidemics broke out in the Wetteren area. Dr. Wauters found that everyone who drank beer survived. Everyone who drank water died. He even wrote a book about it.
As the second beer, they brew Lam Gods. A dark beer. Initially, it was a Christmas/Easter beer. On Christmas Day, the lambs lie by the manger, and during the Easter period, the lambs are eaten.
But Wetteren is known not only for its beer, roses, Scheldt, and the Warande, but also for its thief. Goedertier stole the Lam Gods in 1934. The panel of the Just Judges is still missing. And when there is no news, the search for the Lam Gods becomes world news.
The third beer is a twin Echt kriekenbier, grape beer. This is now the only beer still brewed in the brewery itself, as other breweries do not take the time to work with real sour cherries/grapes. This is also a sour beer beloved by beer enthusiasts.
