Churchgoers who had gotten a dry throat from the murmuring of prayers during the high mass would invariably quench their thirst at In den Hert. As you can see, that name still shines through on the facade even though this building has been called 't Huis van Lede since 2004. The bar was then replaced by the stove of chef Frederick Dhooghe. Together with his wife Joke, he pays tribute to local products with the delicacies he conjures up on the plate.
In 2014, the star chef asked the editorial teams of the Michelin and Gault-Millau gastronomic guides to no longer include his restaurant. He wanted to focus solely on preparing flavorful dishes in complete independence and according to his own vision, with respect for local gastronomic traditions and values, but far removed from anything resembling a spectacle kitchen.
