La birreria è stata fondata nel 2002 da Benoit Johnen & Vivian Langhor. Johnen ha brassato per alcuni anni presso la birreria Piron, che ha dovuto interrompere le attività a causa di gravi problemi tecnici nel 1996. Nel 1997 Benoit e Vivian acquisirono il bar del villaggio "Dodémont" e lo ribattezzarono "Au Grain d'Orge". In una dependance del bar è stata installata una microbirreria con attrezzature acquistate dalle ex birrerie La Magnonnette e Ruwet. Il 19 aprile 2002 è stato lanciato sul mercato il loro primo birra 3 Schténg. Nel 2003 sono state lanciate le birre Brice e Joup. Nel 2007 è stata raggiunta una capacità di 750 hl e si è dovuto cercare un'espansione in una nuova location. La scelta è caduta su una fattoria di famiglia a 500 metri dal bar. Nel 2008 il bar è stato acquisito da Arnaud Johnen affinché Benoit potesse dedicarsi a tempo pieno alla produzione di birra.
