Gepassioneerd door de landbouw sinds zijn kindertijd, nam Jean-Pierre de familieboerderij over en creëerde een kudde Aubrac-runderen. Met de hulp van zijn zoon Jean-Baptiste won hij talrijke prijzen in wedstrijden dankzij dit koeienras, dat erkend is in Aubrac, vandaar de naam.
Jean-Pierre's warme, vriendelijke persoonlijkheid en liefde voor ontmoetingen brachten hem ertoe zijn boerderij om te toveren in een restaurant met traditionele keuken, waar hij graag goede momenten deelt met zijn gasten.
