Chestnut trees are a typical tree around the villages of the Cevennes. These trees were the local source of starch. Because the soil on the schists is not so great to grow potatoes when this became the major source of starch in the 17th and 18th century in Europe, the locals kept on using the chestnut tree. Today, you can still find many recepies with chestnut in the Cevennes. Try the Crème de Marron!
