Le restaurant Patxamama situé dans le quartier du Grand Bayonne est la table à découvrir avec à sa tête le chef Nicolas Bouchard et sa compagne Lise. Nicolas à fait ses classes à Paris, il est passé par l'école Ferrandi, la maison Dutournier, il a fait l'ouverture de l'un des restaurants de Guy Martin, il a occupé plusieurs postes au Meurice ça a duré 2 ans, puis 3 ans au côté de Yannick Alléno avant de tout lâcher pour parcourir l’Amérique Latine... et c’est là-bas qu’il a trouvé l’inspiration pour son restaurant Patxamama. Autant vous dire qu’évidement l’Amérique du sud influence complètement sa cuisine. Une cuisine bistrot avec une influence de voyage. Nicolas travaille les produits locaux frais il attache beaucoup d’importance à sélectionner ses producteurs.
