Hugo van bakkerij Goiris is de ontwikkelaar van het Genker Streekproduct de 'Genkse koekjes'.
Hij ging daarvoor erg bedachtzaam te werk en zocht contact met vrienden en kennissen uit Griekenland, Turkije en Italië, speurde naar authentieke koekjesrecepten, gaf er een eigen twist aan.
Hugo proefde en liet proeven tot hij precies had wat hij wilde: vier koekjes met elke hun eigen, typische smaak: de Findikli (Turks), de Kourabiéthes (Grieks), de Cantucc(ini) (Italiaans) en Pallet des dames (Belgisch).
