Noël Dussac werd opgeleid tot stedenbouwkundige en nam zeven generaties geleden het beheer van het familiedomein over. Hij zegt: "Deze specerij groeit heel goed op de grond van de Limousin. Het klimaat is erg gunstig en de plantages, die op het zuiden liggen, worden beschermd door een laan met sequoia's", legt hij uit. Hij heeft gekozen voor kleine, individuele verpakkingen van slechts een paar gram. Te koop in restaurant Relais des Étangs in Nantiat. Ze serveren sint-jakobsschelpen met saffraan uit Limousin voor de lunch.
