La truffe

Description

Subtle, delicate aromas, combining the taste of mushroom, undergrowth and hazelnut, the ?autumn truffle
(Champagne or Burgundy) is the jewel of autumn on our Côte des Bar.
A product of a unique terroir, this hypogeous (underground) mushroom grows naturally in our forests.

What does it look like?
Round and black, covered with hard scales. Inside, the chocolate-colored flesh is veined with white.

How do you find them?
The truffle is a subterranean mushroom, and requires the assistance of a truffle dog (traditionally a pig) to flush it out
pig) to flush them out. Thanks to his unrivalled sense of smell, he can locate and signal a truffle, an operation known as cavage. The truffles are harvested at optimum maturity.

How are truffles eaten?
The delicate fragrance of the autumn truffle lends itself to a wide range of culinary preparations. They are easy to use, fresh, raw or lightly heated (maximum 50°C).
